Spinach Mushroom Pasta

1 pound fresh spinach
4 large ripe tomatoes, seeded and cut into 1/2 inch chunks
1 lb white mushrooms, sliced thin
6 scallions
2 T capers
1/4 c extra virgin olive oil
salt and fresh ground pepper to taste
1 lb pasta rotini or bow ties
Stack spinach leaves, roll and slice thin.  Place in large bowl and toss the rest of the ingredients.  Set aside while you cook the pasta.  As soon as you drain it, toss with the spinach mixture and serve with grated Parmesan cheese.
