Roasted Green Beans

Excellent side-dish! Works just as well with home-grown frozen beans.

1 lb fresh whole green beans (or any other variety)
1 head of garlic (peel cloves and slice them thin)
1/2 to 1 c pine nuts
2-3 T olive oil
salt and pepper to taste
Preheat oven to 400°.  Combine the beans, garlic and pinenuts in a large bowl and toss with olive oil, salt and pepper until well coated. Spread on a large baking tray and cook for 30 minutes in the center of the oven. Remove from oven every 10 minutes and stir or shake. Watch carefully the last 10 minutes to make sure it doesn’t burn.
