A simple recipe that brings out the best flavor in fingerling potatoes.
1-2 lbs fingerling potatoes (or regular potatoes) cut into generous bite sized chunks
2 – 3 T olive oil
salt and fresh ground pepper
thyme, fresh or dried
Preheat oven to 400°. Toss the potatoes with the olive oil and season with salt, pepper and thyme and place in a large baking dish. Bake up to an hour, until brown and toasty. Take the pan out of the oven every 20 minutes and stir the potatoes to ensure they cook evenly and redistribute the oil.
