Supreme Green Rotini


Kid’s favorite starting in 2003.

1 lb rotini
1 package frozen spinach
3/4 c milk
1 clove garlic
2 T olive oil
salt and pepper

Put the water on for the pasta and cook according to directions.  Drain and return to the pot.  Meanwhile put the frozen spinach in a bowl in the microwave to thaw and cook until heated through.  Transfer to a  blender, add all the other ingredients and process until smooth.  Pour over hot drained pasta in the pot.  Serve hot with topped with parmesan and cottage cheese.
