Super Good Beans


A kid pleaser in 2003.

1 -2 T olive oil
1 onion chopped very fine
3 cloves garlic, pressed
2 cans black beans, (drain and save 1/2 c of the liquid)
1 T lemon juice
1/2 t cumin
salt & pepper to taste

Heat oil in a large frying pan. Add onions and saute for about 10 minutes. Add garlic and cook 5 minutes more stirring often. Add beans and the bean liquid and bring to a simmer, then mash the beans with a masher or wooden spoon. You can leave some beans whole or mash them all, as you prefer. Add the lemon juice, cumin, salt and pepper.  Simmer over very low heat for 10 – 15 minutes.

Arrange any or all of the following on the table and let everyone assemble their own super good bean plates:

tortilla chips
couscous or rice
guacamole or avocado
tomatoes, chopped or sliced
lettuce
cucumbers
olives
salsa
sourcream
