Mini Frittatas

Great party treat!

1 pkg frozen spinach
1 c cottage cheese
1/2 c grated Parmesan
1/2 grated cheddar
4 eggs
1/4 c milk
1 t cumin
fresh ground pepper to taste
2 T fresh cilantro
for serving — salsa & sour cream
Preheat oven to 350 degrees.

Thaw and drain frozen spinach well and combine with all three cheeses.  In a separate bowl, whisk the eggs with milk and spices.  Fold in the spinach mixture along with the herbs.

Spoon into 12 cup lightly greased muffin tin.  Bake for 20-25 minutes, or until completely set.  Let stand for 10 minutes and remove from muffin cups.  Serve with sour cream and salsa on the side.
