A traditional Christmas dish in the Umbria region of Italy.
1/4 c extra-virgin olive oil
1/2 c finely chopped walnuts
1/4 c chopped parsley
1/2 t salt
fresh ground pepper
Italian bread cut into cubes (optional)
1 lb penne, rotini or fusilli
Saute garlic in olive oil over medium low heat. Mix in the rest of the ingredients, heat through and toss with pasta and bread cubes.
