Terrific in the summer with fresh herbs!
small red onion thinly sliced
4 cucumbers, de-seeded and cut into rounds – leave skins on if organic and unwaxed or home-grown
1 t salt
fresh ground pepper
1 1/2 c plain yogurt
2 cloves garlic, minced or pressed
1 T honey
2 T fresh mint, minced
2 T fresh dill, minced
1/4 c fresh parsley, minced
2 scallions, thinly sliced
garnish with lightly toasted walnuts.
Prepare all ingredients and mix everything together except the walnuts. Cover and chill in the fridge until ready to serve. Top with walnut just before serving.
