Burritos


Quick, easy and kids love it.

2 T olive oil
1 small onion, chopped
3 cloves garlic
2 t chili powder
2 cans pinto beans, drained

Fry onions in oil on medium heat; lower heat a little and add garlic; cook for a few minutes more and add chili powder.  Cook for another minute or two and add beans.  Stir well and cook till simmering.  Mash beans well and set aside.

Assemble burritos: roll or fold up bean mixture in flour tortillas, you’ll need 6 – 8.   Add cheese to them before rolling up if desired.  Bake for 10 – 12 minutes at 350° till crisp and browned.

Serve with lettuce, tomato, avocado, scallions or onions, shredded cheese, sour cream, and salsa.
